Zesty Vegetable Stir-Fry with Orange Tofu

A dairy-free, gluten-free, vegan delish!

If you are into Chinese food, like me, but are worried about the unhealthy additives and sugars used by restaurants to make their tasty sauces, you are in for a treat!
I developed this recipe with the sensitive tummy and gourmands’ tastes in mind!
If you are not into tofu, don’t despair! You can easily replace tofu with chicken (if that’s more like your thing) and the results are still spectacular!

Ingredients

1 block organic extra firm tofu (about 14 oz.)
1 medium onion
1 green bell pepper
1 yellow or red bell pepper
8 oz. sliced shiitake mushrooms
2 large garlic cloves
1 scallion
1 tbs. finely grated ginger
1 orange (zest and pulp)
½ cup tamari soy sauce (this is a gluten free version of the soy sauce)
1 cup rice vinegar
¼ cup maple syrup
2 tbs. olive oil

Directions

Step 1: Mix the following ingredients to make an all-natural teriyaki marinade: tamari sauce, rice vinegar, maple syrup, 1 clove diced garlic, 1 tsp grated ginger and diced scallion. Set aside.
Step 2: Remove tofu from package and drain well. Wrap it in a paper towel and press well on all sides, so the excess water is released. We need to make room for the flavorful marinade to be absorbed by the tofu.
Step.3: Cut the tofu into small cubes and add them into the marinade. Cover and let it marinade for at least 20 minutes (the more time it sits, the more flavorful the tofu becomes).
Step 4: In the meantime, cut the bell pepper and onion into pieces and dice the rest of the garlic. Cut the orange into small chunks and save for later. Slice the shiitake mushrooms if not already sliced.
 Step 5: In a wok skillet heat 1 tbs. olive oil and add the garlic (medium heat). Mix well to avoid burning and allow it to become fragrant (about 1 minute). Add shiitake mushroom and stir well. Let it sizzle for about 2 minute. You will notice a beautiful fragrance, as shiitakes combine so well with garlic when sautéed.
Step 6: Add onion and bell peppers on top of the shiitake mixture, stir-fry for a couple of minutes and sprinkle with 2 tbs. tamari sauce (or teriyaki mixture from the marinade). Cover and let it simmer for about 5 minutes. At the end, add the orange chunks, simmer for another minute and remove from heat.
Step 7: In a separate skillet heat 1 tbs. olive oil and add the tofu (press it well with a spoon or your fingers before, so it’s not overly succulent and allows the tofu to develop a nice golden color). Let it sizzle on each side for about 2 minutes (or until you notice a slight brownish color). Flip the tofu on the other side with a spatula when done. Wait a minute and add the marinade mixture on top of it. Let it sizzle for another minute and remove from heat.
Step 8: Pour the tofu and sauce mixture on top of the stir-fry vegetables, sprinkle some LOVE and mix well! Enjoy on top of brown steamed rice along with your loved ones!
