This is now my favorite summer salad recipe. The strong tropical flavors of mango and cilantro blend harmoniously with the creamy avocado and the crunchiness of the red onion, bell pepper and romaine hearts salad. And for an added nutritional value I decided to throw in some actual dark greens (a mixture of spinach, arugula and Swiss chard). This not only adds variety to your salad but nutritional benefits as well. Think iron, fiber and antioxidants.
So, next time you want a quick, but delicious and filling salad give this one a try. Your taste buds will be in heaven!
Ingredients
2 cups Mixed greens salad
2 cups Romains hearts salad
1 mango cut up in cubes
1/2 avocado cut up into cubes
2 tbs red onions cut into small chunks
2 tbs red bell pepper cut up in small cubes
3 tbs cilantro chopped
1 tsp jalapeno pepper chopped (optional)
3 tbs lime juice or lemon juice
2 tbs olive oil
Salt and pepper to taste
Directions
Chop ingredients and mixed them all together in a bowl (keep a few pieces of mango aside for topping). In a separate cup add the lime/lemon juice, olive oil, salt and pepper and mix well with a spoon for a few seconds until the mixture takes the form of a smooth, runny paste. Add dressing over the salad and mix well. Top the salad with the extra pieces of mango and voila! You have a deliciously health –zesty salad to eat by itself or as side to your favorite protein.
