Ditch the traditional carb packed rice and go for a light and nutrient rich cauliflower rice!
Not only is cauliflower light, but it’s also nutrient-rich, being part of the cancer fighting family of vegetables.
Whether you are following a Paleo diet, low carb, gluten-free, vegan or just a healthy-zesty diet this recipe fits it all. And above all, it’s really delicious. Even my 13-year old loved it for real! That right there says a lot 🙂
Cauliflower health benefits:
♥ Protects against cancer, due to its anti-inflammatory and anti-oxidant properties
♥ Promotes detoxification and healthy digestion (rich in fiber, vitamin C, K and beta carotene)
♥ Boosts heart health due to its high content of sulforaphane, which is thought to improve blood pressure and kidney function (according to a study done by the American Journal of Hypertension).
Ingredients
♥ 1 cauliflower head
♥ 2 cloves garlic
♥ 1 tsp. nutritional yeast
♥ 1 tbs. ghee or olive oil
♥ 1 cup frozen pees
♥ 2 eggs
♥ Salt and pepper to taste
♥ And LOVE!
How to Make
Step 1. Cut the cauliflower into florets and place in a food processor. Chop by pulsing until the cauliflower turns into small bits resembling actual rice.
Step 2. Dice the garlic and saute in ghee (or olive oil if vegan) for no more than a minute. I prefer the ghee not only because of the buttery flavor, but also because of its gut soothing benefits. This is a great excuse for me to still enjoy butter 🙂 I do use olive oil way more often though.
Step 3. Add the cauliflower rice to the pan, sprinkle with salt, pepper and nutritional yeast and saute for about 6 minutes mixing often.
Step 4. In the meantime, beat 2 eggs just like you’d be making an omelette. Make a whole in the middle of the pan where the rice is cooking and add the eggs mixing constantly to incorporate it in the cauliflower rice mixture.
Step 5. Add the frozen peas on top and continue cooking for 2 more minutes.
Voila! You made yourself a delicious, protein packed and nutrient rich cauliflower rice that you can enjoy next to your choice of protein or next to roasted root vegetables or even salad.
