Grain-free Nutty Peach Cobbler


A healthy, low carb, grain-free, gluten-free and nutty twist on the peach cobbler!

Enjoy this summer favorite dessert without the sugar spike you get from a traditional crust.

The grain-free and gluten-free crust in this delicious peach cobbler is made out of a blend of almonds, flaxseed, hemp seed and coconut.

It’s rich in fiber, protein and healthy fats and low in carbs. This is what makes this dessert not only delicious, but also very good for balancing hormones and keeping blood sugar levels in check. That’s why a diet high in healthy fats and protein and low in refined carbs speeds up metabolism and aids in weight loss! Want more reasons to try it?

Here comes the triple “G”: It’s Gluten-free, Grain-free, Guilt-free and  just plain DELICIOUS!  You are going to totally love it!

Ingredients

For the crust:
♥ 1 cup almonds (milled)
♥ ½ cup ground flaxseeds
♥ 1/4 cup coconut flour
♥ 1 TBS arrowroot flour
♥ 1 TBS hemp seeds
♥ 1 tsp cinnamon
♥ 1/3 cup melted butter (use coconut oil for a vegan option)
♥ 1 teaspoon vanilla extract
♥ 1 pinch of salt
For the topping
♥ 5 peaches sliced
♥ 1 TBS lime juice
♥ 1 tsp cinnamon
♥ 1 tsp maple syrup
♥ 1 tsp vanilla extract
Preheat oven to 375°

How to Make It

Step 1. Prepare the topping by slicing the peaches and drizzle lemon juice, maple syrup, cinnamon and vanilla extract. Toss and let it sit until the crust is ready.
Step 2. Mix all dry ingredients for the crust. Add vanilla and melted butter and toss well.
Step 3. In a separate bowl, combine dry ingredients and toss in vanilla extract and melted butter. Using a spoon, work in the butter until well incorporated.
Step 4. In a greased pan, add the crust mixture and press well until it is well formed into a crust. Place the pan in preheated oven for about 10 minutes in order to bring up the nutty flavor and slightly solidify crust.
Step 5. Remove pan from oven and add peach mixture. Place in oven and bake for approximately 20 more minutes until the crust is slightly browned on the edges and the peaches are soft and bubbly.
