I heard about the wonders of chia before, but I never took advantage of its true qualities until the other day when I left my imagination run free and created this chia-oats pudding recipe! I had to share my new vegan breakfast creation with you!
I always knew that chia seeds could take this gooey consistency when soaked for a long time, but I never dared to try it. I always used the seeds as topping for my salads, yogurts or just on top of fresh fruits and ate them right away.
But the other day I was looking for another kind of breakfast experience. Since I am going through a vegan 1 I am more careful with getting the right amount of healthy proteins into my diet. And we all know that chia seeds are really rich in protein content, aside from being an important source of omega 3 fatty acids (it actually contains more omega 3 fatty acids than wild salmon).
So, I went ahead and created my own chia-oats pudding with coconut milk. I had to share this vegan chia pudding recipe with you right away. Here it goes…
Ingredients
2 cups unsweetened coconut milk
3 tbs. chia seeds
3 tbs. rolled oats
1 tsp. honey
1 banana
2 dry and pitted dates pureed
2 sliced strawberries
1 tbs. ground flax seeds and coco mix
1 tsp. maca powder (another wonderful superfood that tastes deliciously and gives you loads of energy)
½ tsp. cinnamon powder

Directions
Note: This recipe needs to be made the night before as the chia seeds need time to absorb the liquid and develop the jelly consistency that will result in a creamy and flavorful pudding. It only takes a few minutes and you can even take it with you to work the next morning.
In a bowl add coconut milk, chia seeds, oats, honey and cinnamon powder and mix well. The honey will not dissolve completely, which is perfect, as you will get to chew on small and creamy chunks of it in the morning.
In a blender mix half banana with the 2 dry dates and 1 tablespoon water. You will obtain a smooth and sweet paste that will add some natural sweetness to your pudding. Add the paste to the bowl and mix well.
Cover the bowl with plastic foil and refrigerate overnight so the liquid thickens and takes the consistency of a pudding. The oats will also be nicely soaked, which makes them so much more digestible.
In the morning, mix the pudding with a spoon to make sure all ingredients are nicely spread out. Top the pudding with the sliced strawberries, the rest of the banana, maca powder and flaxseed-coco mix and enjoy the delish! You will enjoy so many flavors in a mouthful that this will become your favorite breakfast!
Aside from being tasty, the chia-oats pudding is a perfect breakfast option for a gluten-free and dairy-free meal. And it keeps your energy up, tummy satisfied and hunger away for a long time.
You can play with the flavors and toppings to your liking. There are so many options to experiment with. I am already thinking of some more combinations myself. How about you?
