♥ 1 1/2 cup quinoa
♥ 3 cups water
♥ 1 boiled or roasted sweet potato (cubed)
♥ 1 roasted or boiled beet (cubed)
♥ 1 cup fresh cucumber (cubed)
♥ 2 tbs. chopped cilantro
♥ 1 jalapeno pepper (chopped)
♥ 2 tbs. lemon juice (or lime)
♥ 1-2 tbs. olive oil (optional)
♥ Salt and pepper to taste
