Summer is almost here (at least here in the south ☺) so it’s time for light and refreshing meals! Last weekend I just made the most delicious summer salad and I had to share it with you!
It looks and tastes like a real gourmet, fancy salad but it’s so easy to make. And even if you have some picky eaters in your family (especially the kids) they will love it, too. After all, the fruits give the salad a sweet taste, which kids always love ☺
Ingredients
♥ 4 cups Spring salad (depending on how many servings you need) – I made 2 servings
♥ 1 cup Goat feta cheese (cubed) – you can use any kind, but I prefer goat as it’s easier to digest
♥ 2 cups watermelon cubes
♥ 1 tbs. shaved red onion
♥ 1 tbs. chopped cilantro (optional) – if you don’t love cilantro just leave it out
♥ 3-4 strawberries (sliced) for topping if desired
♥ Homemade strawberry vinaigrette dressing (ingredients below)
♥ 2 tbs. lemon juice
♥ ½ tsp. mustard
♥ 2 tbs. olive oil
♥ Salt & pepper
♥ 5 strawberries (blended)
♥ 1/2 tsp. honey (optional) if you are looking for a sweeter taste
How to make
In a blender mix the strawberries, lemon juice, olive oil, mustard, salt pepper and honey. That’s your dressing!
Mix all ingredients together, pour the dressing, toss and enjoy! That simple! ☺
You can serve it as is for a light meal or next to grilled chicken if not a vegetarian!
