Ditch the traditional carb packed rice and go for a light and nutrient rich cauliflower rice!<\/h4>\n

Not only is cauliflower light, but it’s also nutrient-rich, being part of the cancer fighting family of vegetables.<\/h5>\n
Whether you are following a Paleo diet, low carb, gluten-free, vegan or just a healthy-zesty diet this recipe fits it all. And above all, it’s really delicious. Even my 13-year old loved it for real! That right there says a lot \ud83d\ude42<\/h5>\n

Cauliflower health benefits:<\/span><\/h4>\n
\u2665<\/span>\u00a0Protects against cancer, due to its anti-inflammatory and anti-oxidant\u00a0properties<\/h5>\n
\u2665<\/span>\u00a0Promotes detoxification and healthy digestion (rich in fiber, vitamin C, K and beta carotene)<\/h5>\n
\u2665<\/span>\u00a0Boosts heart health due to its high content of sulforaphane, which is thought to improve blood pressure and kidney function (according to a study done by the American Journal of Hypertension<\/em>).<\/h5>\n

Ingredients<\/span><\/h4>\n
\u2665<\/span>\u00a01 cauliflower head<\/h5>\n
\u2665\u00a0<\/span>2 cloves garlic<\/h5>\n
\u2665<\/span>\u00a01 tsp. nutritional yeast<\/h5>\n
\u2665<\/span>\u00a01 tbs. ghee or olive oil<\/h5>\n
\u2665<\/span>\u00a01 cup frozen pees<\/h5>\n
\u2665<\/span>\u00a02 eggs<\/h5>\n
\u2665<\/span>\u00a0Salt and pepper to taste<\/h5>\n
\u2665<\/span>\u00a0And LOVE!<\/h5>\n

How to Make<\/span><\/h4>\n
Step 1. Cut the cauliflower into florets and place in a food processor. Chop by pulsing until the cauliflower turns into small bits resembling actual rice.<\/h5>\n
Step 2. Dice the garlic and saute in ghee (or olive oil if vegan) for no more than a minute. I prefer the ghee not only because of the buttery flavor, but also\u00a0because of its gut soothing benefits. This is a great excuse for me to still enjoy butter \ud83d\ude42 I do use olive oil way more often though.<\/h5>\n
Step 3. Add the cauliflower rice to the pan, sprinkle with salt, pepper and nutritional yeast and saute for about 6 minutes mixing often.<\/h5>\n
Step 4. In the meantime, beat 2 eggs just like you’d be making an omelette. Make a whole in the middle of the pan \u00a0where the rice is cooking and add the eggs mixing constantly to incorporate it in the cauliflower rice mixture.<\/h5>\n
Step 5. Add the frozen peas on top and continue cooking for 2 more minutes.<\/h5>\n
Voila! You made yourself a delicious, protein packed and nutrient rich cauliflower rice that you can enjoy next to your choice of protein or next to roasted root vegetables or even salad.<\/h5>\n
