\nCooking time: 25-35 minutes
\nServes 4 to 6<\/h5>\nIngredients:<\/span><\/h5>\n
1 sweet potato
\n2 parsnips
\n2 carrots
\n2 turnips or 1 large rutabaga
\n1 daikon radish (or substitute\/add in other favorites, like squash or beets)
\nextra virgin olive oil
\nsalt and pepper
\nherbs: rosemary, thyme or sage (fresh if possible)<\/h5>\nDirections<\/span><\/h5>\n
Preheat oven to 375 degrees (or even to 400 degrees if you like your veggies more on the crispy side).<\/h5>\n
Wash and dice all vegetables into bite-sized cubes.<\/h5>\n
Place in a large baking dish with sides.<\/h5>\n
Drizzle with olive oil; mix well to coat each vegetable lightly with oil.
\nSprinkle with salt, pepper and herbs.<\/h5>\nBake uncovered for 25-35 minutes until vegetables are tender and golden brown, checking every 10 minutes to stir and make sure veggies are not sticking.<\/h5>\n
Tip<\/em>: Any combination of vegetables will work. Roasting only one kind of vegetable also makes a nice side dish. I personally like to experiment with many different vegetables, as I love\u00a0the rich taste the colorful vegetables develop\u00a0when roasted. And as always, don’t forget to cook it with Love! It all tastes better when made with love!<\/h5>\n
